AAS Degree in Culinary Arts
The student’s final semester at CIV will be focused on group projects that tie together skills taught throughout the program.
Restaurant Simulation
Utilizing the skills taught throughout the program, the student will develop a restaurant:
- Design Menu
- Create Original Menu Dishes
- Test Original Menu Dishes
- Cook, serve, and present the final menu to invited guests of the college.
Management Course Series
Throughout enrollment, students partake in focused courses that compliment their culinary lab classes. These courses are designed to provide students with specific knowledge and skills in areas such as:
- Sanitation
- Nutrition
- Supervision
- Purchasing
- Food and Beverage Cost Controls
- Wine and Beverage Management
